Hell, I say go for it. 1000s are fun as long as you can keep your balls and throttle hand in check. Having rode with you many times, I think you'd do just fine. 1000s for the street, 600s for the track. Especially if you ride 2up, the torque of the liter bike will save the gearbox, unlike the 600.

dont know if I understand what you mean about 600 for the track and 1000 for the street, are you talking about handling or power, because honestly that gsxr almost has to much torque for the street

With a liter bike on the street you don't have to work the bike so hard (because of the low end torque) and don't have to shift so much. Plus, if you ride 2 up, the bike can handle the extra weight better. You'll never get anywhere near the bike's potential, but it's just easier.

On the track, it's ok to really ring the 600 out and make the most of it's lighter weight and better handling. The 1000's are so fast that when you really rail on them they still prove to be too much for all but the most experienced hands.

Of course, you could just stay away from a race replica bike for the street and ride something like an FZ1 that is designed for more power down low and easier street riding, but you know all about that don't you?

Good answer Ron. Also, the added weight of a 1000 isn't nearly as noticable on the street as much as a track. A 600 is a lot more error friendly when you push it past your comfort zone, which you should reserve for the track only.
